It’s just about the end of the month (year) and we are in the thick of December and Christmas holidays! We’ve had our Big Fat Rebel PT Christmas Quiz Night, been sledging, been to the cinema and run 28 #5kaday (s) so far… not to mention bootcamp in the snow, beach training in the snow and countless quality streets and mince pies. Eilidh’s famous Super Berry Smoothie Recipe*
450g bag of frozen berries
Pot of Natural yoghurt, if you prefer a flavour look for strawberry (P.S this will change the sugar content)
100ml of milk
25g of porridge oats
2tbs of honey (optional)

Alice’s famous homemade granola recipe*
250ml runny honey
5 tbs coconut oil
50g pumpkin seeds
50g flax seeds
200g almonds, roughly chopped
500g rolled oats
200g dried apricots, chopped
Serve with milk or yoghurt!
Method: Preheat the oven to 180 degrees C and line two baking trays with greaseproof paper.
Melt the honey and the coconut oil in a pan until runny, add everything but the dried apricots to a large bowl, pour over the honey mix and stir together until everything is well coated.
Spread evenly across the baking trays and bake for 10 – 15 mins, until toasted and golden.
Stir through the chopped apricots and allow to cool. The granola will keep for up to a month in an air tight container.
